Ingredients
For the Cookie:
- 532 g Plain Flour
- 36 g Cocoa Powder
- 14 g Baking Powder
- Pinch of Salt
- 224 g Unsalted Butter
- 192 g Light Brown Sugar
- 200 g Caster Sugar
- 4 Medium Eggs
- 1 tsp Vanilla Essence
- Fat-Soluble Red Food Colouring (Gel)
Method (Makes 24)
1. Prepare the Dough
- Sieve the flour, cocoa powder, baking powder, and salt together in a bowl.
- Using the paddle attachment on a stand mixer, cream together the butter, vanilla, and sugars until light and fluffy. Scrape down the sides of the bowl to ensure everything is fully incorporated.
- Add the eggs one at a time, mixing well and scraping the bowl after each addition.
2. Add the Dry Ingredients
- Fold in the sieved dry ingredients and food coloring. Adjust the amount of coloring until you achieve the desired vibrant red hue.
3. Rest and Portion
- Rest the dough in the fridge for 1 hour.
- Weigh out the dough into 60 g portions and roll each piece into a ball.
4. Coat and Bake
- Coat each dough ball in caster sugar, followed by icing sugar, ensuring an even coating.
- Preheat your oven to 170°C (fan-forced).
- Arrange the cookies on a baking tray lined with parchment paper.
- Bake for 10 minutes, then rotate the tray and bake for an additional 4 minutes.
