As part of its 10th anniversary, Cape Arid Rooms will collaborate with COMO Orchard and COMO Dempsey in Singapore – two trailblazing lifestyle destinations that cultivate culinary innovation and creativity – to bring a world-class lineup of events to Perth.

In celebration of the State Buildings’ 10-year anniversary, the team from the world-renowned pastry chef Cedric Grolet will take over Cape Arid Rooms for a five-day exclusive experience.

Known globally for sculptural fruit desserts and visionary pastry artistry, Grolet will present a selection of iconic sweet and savoury creations — including signature cakes and world-famous ‘fruits’.

This is a rare and unforgettable opportunity to experience Cedric Grolet in Perth, as the team push the boundaries of patisserie to the heart of the State Buildings.

Aurelien Mailly – Executive Chef
Growing up in Normandy, France, Aurelien Mailly was surrounded by the comforting rituals of home cooking. With a grandfather who was a chef and food at the heart of daily life, he developed a deep passion for the art of cooking — one he chose to turn into a profession.

After specialising in pastry at International Hotel School Savoie – Léman, a hospitality school in Thonon-les-Bains, France, he began his career as an apprentice in Paris under Japanese pastry chef Sadaharu Aoki, where he gained a solid grounding in technical skills. A move to London followed in 2016, where he joined Dominique Ansel’s team as Demi Chef de Partie and later cut his teeth in five-star hotels like The Langham, broadening his culinary outlook and honing his attention to detail.

In 2022, Mailly joined the opening team of Cedric Grolet Singapore as Sous Chef, drawn by the brand’s creative ambition and exacting standards. Now as Executive Chef, he carries forward Grolet’s signature savoir faire — transforming ingredients into intricate creations inspired by the maison’s twin universes of fruits and flowers — each one a balance of visual artistry and refined flavour.

Grounded in professionalism and open communication, Mailly fosters a culture of consistency and high standards, ensuring every element—from ingredient to service — reflects the precision and imagination that define the Cedric Grolet experience.
