Niko Romito’s restaurant Reale, housed in a stunning 16th century building in the mountains of Abruzzo, has garnered three Michelin stars. Reale is also widely recognised as the top restaurant in Italy after receiving the Best Italian Score in the Gambero Rosso Guide in both 2018 and 2019, earning three forks and a remarkable ranking of 96/100.
Niko Romito describes his cooking philosophy as “complex, but not complicated”, focusing on innovative techniques to enhance the intrinsic flavours of local ingredients from the Abruzzo region.
With a mutual fascination and dedication to showcasing the incredible ingredients of their homeland, Wildflower Head Chef, Matthew Sartori is thrilled to welcome Romito into the kitchen. “The philosophy of Wildflower and Reale is very similar as we both share a common passion for sourcing the finest and often lesser-known local ingredients and respecting their delicate seasonality.”
