About Timo Mayer:
A self-proclaimed German farmer with and warm smile and eccentric mind. Timo grew up in Wuttembery region of Germany, where his family have been making wine. It’s a region heavy on tradition and full or small family run-vineyards. Timo eventually headed off to explore the world, alongside his wife Rhonda where they eventually found Yarra Valley as their home.
In the mid 1990s some of the wines in the Yarra were strong and robust but they didn’t match the cool climate – Timo wanted to create more elegant, interesting and thought-provoking wines. He found himself working at De Bortolli under Steve’s guidance, before moving to Gembrook and working at Gembrook, he was ready to make his own mark on the wine world and launched Mayer Wines.
The words bombastic, charismatic and wild are as much applicable to the man. The signature of Timo’s winemaking style is his penchant for whole-bunch fermentation to have an ethereal quality, firm tannins and impeccable structure. This wine is a compelling limited wine that tells the unique story of Yarra Valley.
About the Wine:
If you’re looking for a big, bold and buttery Chardonnay you won’t find that here – what you’ll find is a delicate, lean and racy white that’s near impossible to put down. The fruit comes from volcanic soils in the upper Yarra Valley, which add a layer of mineral complexity into the fold. Bright, fresh stone fruits, citrus laden and wildly refreshing. If you like Chablis, you’ll find a whole lot of delight here.
